The excellence of Tuscan oil

Extra Virgin Olive Oil

An award-winning oil

"Standing out above all is the Vipiano extra virgin olive oil (Best in Class Medium Blend) by Giancarlo Giannini (Arezzo), described as follows by the panel judges in the sensory analysis: aromas of green fruit, grass, artichoke and unripe notes. On the palate it presents abundant fruitiness, fresh grass and aromatic herbs, slightly sweet, bitter and with vigorous spiciness. Exceptional harmony, high complexity and persistence."

Character and identity

A distinctive sensory profile

Colour, fragrance and taste tell the story of an oil of excellence

The Giannini family’s Extra Virgin Olive Oil presents a medium consistency and a colour that ranges from light green to deep green when freshly extracted, gradually evolving over time towards more golden yellow hues.

On the nose, a fresh and slightly pungent fruitiness emerges, while on the palate it stands out for a mildly bitter taste and a lively note that tends to soften with storage.

A natural balance that expresses authenticity and care in the production process.

Origin and processing

From the land to the mill

A controlled supply chain to ensure superior quality

Our Extra Virgin Olive Oil is made from selected olives of the Moraiolo, Frantoio, Leccino and Raggiale varieties, cultivated between 300 and 600 metres above sea level in the areas of Arezzo and Castiglion Fiorentino. The olive groves, facing south-east and south-west on terraced land, benefit from ideal conditions.

Harvesting is carried out by hand and the olives are processed within a few hours, with cold extraction and rapid processes, to best preserve the aromas and organoleptic properties.

Freshly harvested olives, green and purple in colour, being washed with a water spray jet during the processing stage for the production of extra virgin olive oil.
